You can make an easy treat from your left over seeds of your carved pumpkin. Discard the stringy fiber from the seeds and transfer to a strainer, rinse, and boil in about 4 cups of water for about 10 minutes. Drain again and soak up excess water with a paper towel. Toss with oil and spread out in a single layer at about 250 degrees for about an hour with stirring every ten minutes. Add flavor to your seeds i.e., salt, cinnamon and sugar, garlic and parmesan, taco lime or create something of your own! You can also use the seeds to garnish salads and meals. Enjoy!
